Ingredients

  • 2tbspOlive oil
  • 1mediumOnion(chopped)
  • 3clovesGarlic(minced)
  • ½cupSun-dried tomatoes(chopped)
  • ¼tspRed pepper flakes
  • 1tspDried Herbs(oregano or parsley)
  • 2tbspTomato paste
  • 1cupBroth
  • 1cupCoconut milk
  • 1canChickpeas(drained and rinsed)
  • 2cupsSpinach(fresh)

Instructions

  1. 1 Heat a small amount of olive oil in a pan over medium heat.
  2. 2 Add chopped onion and sauté until softened.
  3. 3 Add minced garlic and cook for another minute until fragrant.
  4. 4 Stir in chopped sun-dried tomatoes, red pepper flakes, and dried seasonings.
  5. 5 Cook for a minute, stirring constantly.
  6. 6 Add tomato paste to the pan and stir it into the mixture, cooking for about a minute to deepen its flavor.
  7. 7 Pour in the broth and stir to combine, scraping up any browned bits from the bottom of the pan.
  8. 8 Bring to a simmer.
  9. 9 Pour in the coconut milk and stir until the sauce is well combined and creamy.
  10. 10 Drain and rinse the chickpeas, then add them to the pan.
  11. 11 Stir the chickpeas into the sauce.
  12. 12 Add fresh spinach to the pan and stir until it wilts into the sauce.
  13. 13 Continue to simmer the chickpea mixture until it's heated through and the sauce has thickened slightly.
