- ½cupCookie Butter(smooth variety)
- 3tbspButter(unsalted, for frying)
Custard
- 3largeEgg(whisked)
- ½cupWhole milk(room temperature)
Garnish
- ½cupBiscoff cookies(crushed)
- 4tbspCaramel Sauce(warmed)
- to tastePowdered Sugar(for dusting)
Instructions
Preparation
- 1 Lay out 4 slices of brioche and spread 2 tablespoons of cookie butter on each slice.
- 2 Top each with the remaining 4 slices of brioche to create sandwiches, pressing the edges lightly to seal.
Cooking
- 1 In a shallow dish, whisk together the eggs and milk until well combined.
- 2 Heat the butter in a large non-stick skillet over medium heat.
- 3 Dip each sandwich into the custard, allowing it to soak for about 5 seconds per side, then transfer immediately to the skillet.
- 4 Cook for 3-4 minutes per side until golden brown and the center is warmed through.
Finishing
- 1 Remove from heat and plate the toast.
- 2 Drizzle with warm caramel, sprinkle with crushed Biscoff cookies, and finish with a dusting of powdered sugar.
- 3 Optional: finish with fresh raspberries scattered around the stack just before serving.
