Ingredients

  • ½cupGreek Yogurt(estimated)
  • ½cupWhey Protein Powder(estimated)
  • ½cupCasein Protein Powder(estimated)
  • ½cupErythritol(estimated, divided for dough and glaze)
  • ½cupFlour(estimated)
  • 1tspBaking powder(estimated)
  • 1tspVanilla Extract(estimated)
  • to tasteWater or Almond Milk(estimated, for dough consistency and glaze)

Instructions

  1. 1 In a mixing bowl, combine the Greek yogurt, whey protein, casein protein, erythritol, flour, baking powder, and vanilla extract.
  2. 2 Add a small amount of liquid as needed to form a workable dough.
  3. 3 Divide and roll the dough into 25 small, equal-sized balls.
  4. 4 Place the dough balls into the air fryer basket.
  5. 5 Cook at 350°F (175°C) for 5 minutes.
  6. 6 While the munchkins are cooling, mix a small amount of erythritol with a tiny bit of water or milk to create a thin glaze.
  7. 7 Drizzle or dip the air-fried munchkins in the glaze.
  8. 8 Allow them to sit for a moment so the glaze can harden into a crisp shell.
