  • 1cupPanko breadcrumbs(Divided)
  • ½cupParmesan cheese(Grated)
  • 1largeEgg(Beaten)
  • 1tspSalt(divided)
  • ½tspBlack pepper(freshly ground)

Sauce

  • 15ozCrushed tomatoes(Canned, low sodium)
  • 2cupCherry tomatoes(halved)
  • 3cloveGarlic(Smashed)

Topping

  • 4ozFresh mozzarella(Torn into pieces)

Finish

  • 1bunchFresh Basil(Torn)

Serve

  • 8ozSpaghetti(Whole wheat or semolina, cooked al dente)

Instructions

Preparation

  1. 1 Preheat oven to 425F (220C).
  2. 2 Prepare the chicken by dipping into the beaten egg and then into a mixture of panko and half the parmesan.
  3. 3 Spread crushed tomatoes into the base of a square baking dish and scatter the smashed garlic throughout.
  4. 4 Arrange the breaded chicken cutlets on top of the sauce, leaving space between them.
  5. 5 Place halved cherry tomatoes in the gaps and on top of the chicken.
  6. 6 Top each cutlet with torn fresh mozzarella, remaining parmesan, and a light sprinkling of panko.
  7. 7 Bake for 25 minutes or until the cheese is bubbling and golden.
  8. 8 Serve immediately over a small portion of cooked spaghetti, finished with fresh torn basil.
