Instructions

Preparation

  1. 1 Preheat air fryer to 400°F (200°C).
  2. 2 Pat the shrimp thoroughly dry with paper towels so the coating adheres.
  3. 3 Toss the shrimp in the olive oil, then in the cornstarch until lightly dusted, and press into the panko for a thin craggy crust.
  4. 4 Arrange shrimp in the air fryer basket in a single layer and cook for 6-8 minutes, flipping halfway through, until golden and crisp.

Sauce & Assembly

  1. 1 In a medium bowl, whisk together the Greek yogurt, light mayo, sriracha, and honey until smooth.
  2. 2 Remove 1/4 of the sauce and set aside in a small bowl for dipping.
  3. 3 Add the cooked shrimp to the remaining sauce and toss gently until every shrimp is evenly coated.
  4. 4 Transfer to a serving platter.
  5. 5 Optional: garnish with sliced scallion greens and toasted sesame seeds.
