Ingredients

Latte Base

  • 4ozEspresso(brewed strong and chilled)
  • 12ozUltra-filtered Milk(cold, fat-free)

Protein Cream

  • 60gGreek Yogurt(0% fat, plain)
  • 30gVanilla Casein Protein Powder(high quality)
  • 15gMascarpone(softened)

Garnish

  • 2pieceLadyfinger Biscuits(divided)
  • 1tspCocoa powder(unsweetened)
  • 1tspSugar-free Caramel Sauce(for the drizzle)

Instructions

Protein Cream

  1. 1 In a small bowl, whisk together Greek yogurt, vanilla casein, and mascarpone until smooth and thick.
  2. 2 If too stiff, thin with a teaspoon of cold espresso until it reaches a spreadable, whipped consistency.

Assembly

  1. 1 Pour 6oz of well-chilled ultra-filtered milk into each of two tall glasses.
  2. 2 Slowly pour 2oz of chilled espresso down the inside of each glass so it marbles into the milk.
  3. 3 Spoon the protein cream mixture onto the surface of the lattes.
  4. 4 Dust with cocoa powder and drizzle with sugar-free caramel.
  5. 5 Dip the tip of one ladyfinger into the espresso and balance it on the rim of the glass immediately before serving.
