- 1 Slice the avocado half thinly and gently press to fan out into two portions.
- 2 Halve the cherry tomatoes and set aside.
- 3 Arrange the smoked salmon slices decoratively on two plates.
Cooking the Eggs
- 1 Melt the butter in a non-stick skillet over low heat.
- 2 Pour in the whisked eggs and stir constantly with a silicone spatula using slow, sweeping motions.
- 3 Continue cooking until the eggs are soft-set and creamy, about 3-5 minutes.
- 4 Remove from heat immediately, season with salt and pepper, and divide onto the plates next to the salmon and avocado.
