Base
- 10pieceChocolate Sandwich Cookies(finely crushed)
Filling
- 2cupCottage Cheese(nonfat, room temperature)
- ½cupGreek Yogurt(plain, nonfat)
- 2scoopCasein Protein Powder(vanilla or chocolate flavor)
- 4tbspNatural peanut butter(creamy, unsweetened)
- 2tbspPowdered Peanut Butter(whisked in)
Topping
- 2 ½ozDark chocolate(70% cocoa, chopped)
- 3tbspFat-Free Milk(for melting ganache)
- 2piecePeanut Butter Cups(halved)
Instructions
Base and Filling
- 1 Divide the crushed chocolate cookies evenly among four small mason jars or glasses, pressing down lightly to form a base.
- 2 In a high-speed blender, combine the cottage cheese, greek yogurt, protein powder and peanut butter.
- 3 Blend until completely smooth.
- 4 Spoon the cheesecake mixture into the jars over the cookie base, leaving about 1/2 inch of space at the top.
Ganache and Finish
- 1 Melt the dark chocolate and fat-free milk together in the microwave in 20-second intervals until smooth.
- 2 Pour a thin layer of ganache over the top of each jar, tilting the jar for full coverage.
- 3 Immediately press half a peanut butter cup into the center of the wet chocolate.
- 4 Refrigerate for 10 minutes to let the chocolate shell harden before serving.
