Ingredients

  • 10pieceChocolate Sandwich Cookies(finely crushed)

Filling

  • 2cupCottage Cheese(nonfat, room temperature)
  • ½cupGreek Yogurt(plain, nonfat)
  • 2scoopsCasein Protein Powder(vanilla or chocolate flavor)
  • 4tbspNatural peanut butter(creamy, unsweetened (plus 2 tbsp powdered peanut butter whisked in))

Topping

  • 2 ½ozDark chocolate(70% cocoa, chopped, melted with 3 tbsp fat-free milk into a pourable ganache)
  • 2piecePeanut Butter Cups(halved)

Instructions

Base and Filling

  1. 1 Divide the crushed chocolate cookies evenly among four small mason jars or glasses, pressing down lightly to form a base.
  2. 2 In a high-speed blender, combine cottage cheese, Greek yogurt, protein powder, and peanut butter. Blend until completely smooth.
  3. 3 Spoon the cheesecake mixture into the jars over the cookie base, leaving about 1/2 inch of space at the top.

Ganache and Finish

  1. 1 Melt the dark chocolate and coconut oil together in the microwave in 20-second intervals until smooth.
  2. 2 Pour a thin layer of chocolate ganache over the top of each jar, tilting the jar to ensure full coverage.
  3. 3 Immediately press half a peanut butter cup into the center of the wet chocolate.
  4. 4 Refrigerate for 10 minutes to allow the chocolate shell to harden before serving.
