- 400g96/4 Extra Lean Ground Beef(divided into four 100g balls)
- 4sliceReduced Fat Cheddar Cheese(room temperature)

Sauce
- 3tbspNonfat Greek Yogurt(plain)
- 1tspTomato paste(double concentrated)
- 1tspYellow Mustard(prepared)
- 1tspPickle Brine(from the jar)
Instructions
Burger Sauce
- 1 In a small bowl, whisk together the greek yogurt, tomato paste, mustard, and pickle brine until smooth.
- 2 Refrigerate until ready to serve.
Patties and Assembly
- 1 Heat a non-stick skillet or cast-iron pan over medium-high heat until very hot.
- 2 Form the beef into four 100g loose balls, place them in the pan and smash firmly with a heavy spatula into thin patties.
- 3 Cook for 2 minutes on the first side until deeply browned, flip, then immediately top each patty with a slice of cheese.
- 4 Cover the pan for 30-45 seconds to melt the cheese.
- 5 Toast the buns, spread sauce on the bottom bun, then layer lettuce, tomato, onion, two patties per bun, and pickles.
