Instructions

Preparation

  1. In a small bowl, whisk together soy sauce, grated ginger, minced garlic, brown sugar, and 1 tablespoon of cornstarch. Set aside.
  2. Toss the cubed beef in a bowl with 2 tablespoons of cornstarch until lightly and evenly coated.

Cooking

  1. Heat a large wok or skillet over high heat with a thin layer of neutral oil.
  2. Once smoking, add the beef in a single layer to avoid overcrowding.
  3. Sear the beef undisturbed for 2-3 minutes to develop a dark, crispy crust on one side.
  4. Flip and cook for another 1-2 minutes.
  5. Add the dried red chilies to the pan, then pour the sauce mixture over the beef.
  6. Toss rapidly for 60 seconds as the sauce bubbles and glazes the beef cubes into a sticky consistency.
  7. Remove from heat immediately and serve hot.
  8. Optional: garnish with scallion ribbons and toasted sesame seeds.
