- 1lbTop Sirloin(cut into 1-inch cubes)
- 1tspSalt(divided)
- ½tspBlack pepper(freshly cracked)
Mash
- 1lbYukon Gold Potatoes(peeled and quartered)
- ½cupGreek Yogurt(plain, nonfat)
- ¼cupFat-Free Milk(warmed)
Sauce
- 2tbspButter(unsalted)
- 4cloveGarlic(minced)
- 1tbspFresh parsley(finely chopped)
Instructions
Creamy Mash
- 1 Place potatoes in a pot of cold salted water, bring to a boil and cook until fork-tender, about 12-15 minutes.
- 2 Drain thoroughly and return to the warm pot to dry for 1 minute.
- 3 Mash until smooth, then fold in the greek yogurt and warm fat-free milk until creamy; season with salt.
Seared Steak Bites
- 1 Season the steak cubes with salt and pepper.
- 2 Heat a cast-iron skillet over high heat until smoking.
- 3 Sear the cubes for 2 minutes per side to develop a hard crust.
- 4 Reduce heat to medium, add the butter, garlic and parsley to the pan.
- 5 Baste the steak bites with the foaming herb butter for 1 minute.
- 6 Spoon the mash onto plates, top with the steak, and drizzle over the remaining pan butter.
