Instructions

Assemble

  1. Preheat the oven to 425°F (220°C).
  2. Shingle the pickle chips in one overlapping row along one side of an oval baking dish.
  3. Divide the beef into 5 portions, press each into a thin patty about 4 inches across, season with salt and pepper and lay them along the opposite side.
  4. Cut the potatoes into 3/4 inch cubes, season with salt and pack them down the middle.
  5. Whisk the mayo, ketchup, mustard and relish and drizzle the sauce over the potatoes and patties.
  6. Lay the cheese slices over the patties and potatoes, leaving the pickles uncovered.

Bake and serve

  1. Bake for 25 minutes, until the patties are browned with crispy edges, the potatoes are tender and the cheese is melted.
  2. Top with the lettuce, onion, tomato and sesame seeds and serve with extra sauce.

Chef's Notes & Tips

Tip 1 of 2

To ensure the potatoes cook through before the beef dries out, par-boil them for 5 minutes in salted water and pat them completely dry before seasoning.

Tip 2 of 2

Place the baking dish on the top rack to encourage the cheese to blister and the edges of the beef to get that signature smash-burger crust.
