Ingredients

Pasta

  • 6ozRigatoni(dry)

Sauce

  • 1cupCottage Cheese(nonfat, small curd)
  • 2tbspTomato paste(double concentrated)
  • 2cloveGarlic(minced)
  • 1 ½tbspVodka(any standard variety)
  • ¼cupParmesan(freshly grated)

Garnish

  • 1tbspBasil(fresh, chiffonade)

Seasoning

  • to tasteSalt(kosher)

Instructions

Pasta Preparation

  1. 1 Bring a large pot of salted water to a boil.
  2. 2 Cook rigatoni according to package instructions until al dente.
  3. 3 Reserve 1/2 cup of pasta water, then drain the pasta.

Sauce Creation

  1. 1 In a blender, combine cottage cheese, tomato paste, and parmesan until completely smooth.
  2. 2 In a large skillet, saute minced garlic over medium heat for 1 minute until fragrant.
  3. 3 Pour in the vodka and let it simmer for 2 minutes to cook off the harsh alcohol flavor.
  4. 4 Lower the heat and stir in the blended cottage cheese mixture.
  5. 5 Add 1/4 cup of the reserved pasta water to the sauce and stir until velvety.

Assembly

  1. 1 Toss the cooked rigatoni into the skillet with the sauce, adding more pasta water if necessary to achieve the desired consistency.
  2. 2 Remove from heat, top with fresh basil, and serve immediately.
