Ingredients

Icing

  • 115gGreek Yogurt(For icing)
  • 60gWhey-casein Protein Blend(Vanilla flavor)
  • 1tspVanilla Extract(Pure)

Instructions

Dough Preparation

  1. 1 Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. 2 In a large bowl, whisk together the protein powder, flour, and baking powder.
  3. 3 Fold in the Greek yogurt until a shaggy dough forms. Use your hands to knead gently on a lightly floured surface until smooth.
  4. 4 Roll the dough out into a long, thin rectangle.

Assembly and Baking

  1. 1 Mix the cinnamon and brown sugar substitute together and sprinkle evenly over the dough rectangle.
  2. 2 Roll the dough into one long log, then coil it into a spiral and place into the prepared cake pan.
  3. 3 Bake for 18-22 minutes or until the edges are golden and the center is set.
  4. 4 While baking, whip the remaining Greek yogurt, protein powder, and vanilla until smooth and opaque.

Finishing

  1. 1 Drape the protein icing generously over the warm roll.
  2. 2 Allow to cool slightly, then cut into 4 equal wedges.
