Instructions

Preparation

  1. 1 Cook the white rice according to package instructions until tender.
  2. 2 While the rice cooks, heat half the olive oil in a skillet over medium-high heat.
  3. 3 Add the ground turkey, seasoning with salt and pepper, and cook until browned and fully cooked through.
  4. 4 Add cumin and paprika to the turkey, stirring for 30 seconds until fragrant.
  5. 5 Remove turkey from the pan and add the remaining olive oil and sliced peppers. Sauté until tender-crisp.
  6. 6 Add the black beans to the pepper pan just to warm through.

Assembly

  1. 1 Divide the cooked rice between two shallow bowls.
  2. 2 Arrange the spiced turkey, pepper mixture, and black beans in distinct sections atop the rice to finish.
