Instructions

Creamy Mash

  1. 1 Place potatoes in a pot of cold salted water, bring to a boil and cook until fork-tender, about 12-15 minutes.
  2. 2 Drain potatoes thoroughly and return to the warm pot to dry for 1 minute.
  3. 3 Mash the potatoes until smooth, then fold in the Greek yogurt and warm fat-free milk until creamy; season with salt.

Seared Steak Bites

  1. 1 Season steak cubes with salt and pepper.
  2. 2 Heat a cast-iron skillet over high heat until smoking.
  3. 3 Sear steak cubes for 2 minutes per side to develop a hard crust.
  4. 4 Reduce heat to medium, add butter, garlic, and parsley to the pan.
  5. 5 Baste the steak bites with the foaming herb butter for 1 minute.

Assembly

  1. 1 Spoon the Greek yogurt mash onto plates.
  2. 2 Top with the seared steak bites and drizzle with the remaining pan butter.
