Instructions
Preparation and Baking
- 1 Preheat your oven to 425F (220C).
- 2 Arrange the halved potatoes, red onion wedges, and garlic cloves in a single layer in a large oval baking dish.
- 3 Pat the chicken thighs dry with paper towels and nestle them skin-side up among the vegetables. Tuck the lemon slices throughout.
- 4 Whisk the olive oil, lemon juice, dried oregano, salt, and pepper; pour evenly over the chicken and vegetables. Pour the chicken broth into the bottom of the dish.
- 5 Bake for 45 minutes, or until the chicken skin is deep golden brown and the potatoes are fork-tender.
- 6 Remove from the oven, top with crumbled feta and Kalamata olives, and serve immediately with a side of tzatziki.
