Instructions

Assemble

  1. Preheat the oven to 400°F (200°C).
  2. Fold each corn tortilla in half and shingle them in one overlapping row along one side of an oval baking dish.
  3. Rub the sliced beef with the birria spice blend and lay it along the opposite side.
  4. Pack the diced onion and chopped cilantro down the middle.
  5. Pour the beef broth into the gaps so it soaks the tortillas, then pile the shredded Oaxaca cheese thickly over the beef, onion and tortillas.

Bake and serve

  1. Bake for 30 minutes, until the beef is tender and the cheese is melted and browned.
  2. Fill the soaked tortillas with beef and cheese, and serve with lime wedges and the broth from the dish as consommé for dipping.

Chef's Notes & Tips

Tip 1 of 2

To achieve a crispy edge on the tortillas, brush them lightly with a tiny amount of beef tallow or oil before baking.

Tip 2 of 2

Do not overcook the shaved beef during the initial sear; it will finish perfectly in the oven with the residual heat of the consommé.
