Instructions

Preparation

  1. 1 Preheat oven to 400°F.
  2. 2 Boil a large pot of water and blanch pepper halves for 3 minutes; drain and set aside.
  3. 3 In a skillet over medium-high heat, brown the ground beef until cooked through; drain excess fat.
  4. 4 Stir the cooked rice into the beef.

Assembly and Baking

  1. 1 Arrange pepper halves in a baking dish. Divide the beef and rice mixture equally among the peppers.
  2. 2 Pour the fire-roasted tomato sauce over the top of each stuffed pepper.
  3. 3 Sprinkle with shredded mozzarella and grated parmesan.
  4. 4 Bake for 30 minutes until the cheese is browned and bubbling.
  5. 5 Remove from oven and finish with fresh torn basil before serving.
