Ingredients

Banana Bread

  • 4mediumBanana(very ripe, mashed)
  • ½cupButter(melted and cooled)
  • ¾cupBrown sugar(packed)
  • 2largeEgg(room temperature)
  • 1tspVanilla Extract(pure)
  • 2cupAll-purpose flour(sifted)
  • 1tspBaking Soda(fresh)
  • ½tspSalt(fine sea salt)
  • 1tspCinnamon(ground)

Custard Topping

  • 3largeEgg yolk(room temperature)
  • 1cupHeavy Cream(high fat content)
  • ¼cupSugar(granulated)
  • ½tspVanilla bean paste(or extract)

Finish

  • 3tbspSugar(for torching crust)

Instructions

Prepare Banana Bread

  1. 1 Preheat oven to 350°F (175°C) and grease a 9x5 loaf pan.
  2. 2 Whisk together mashed bananas, melted butter, brown sugar, eggs, and vanilla.
  3. 3 Fold in flour, baking soda, salt, and cinnamon until just combined.
  4. 4 Pour into loaf pan and bake for 40 minutes.

Prepare and Bake Custard

  1. 1 While bread bakes, whisk egg yolks, heavy cream, sugar, and vanilla until smooth.
  2. 2 After 40 minutes, carefully remove the bread from the oven and pour the custard mixture over the top.
  3. 3 Return to the oven for an additional 20-25 minutes until the bread is set and the custard has a slight jiggle in the center.
  4. 4 Remove and let cool completely on a wire rack, then chill in the refrigerator for at least 2 hours.

Caramelize and Serve

  1. 1 Evenly sprinkle the remaining granulated sugar over the set custard layer.
  2. 2 Use a kitchen torch to melt and caramelize the sugar into a golden-brown glass shell.
  3. 3 Allow the sugar to harden for 2 minutes before slicing into 10 even portions.
