- 1–1.5lbsBeef(stew meat or ground)
- 2tbspOil
- 1Onion(diced)
- 3clovesGarlic
- 3Carrots(sliced)
- 2–3stalksCelery
- 2–3Potatoes(cubed)
- 1cupGreen Beans
- 1cupCorn(optional)
- 1Zucchini(optional)
- 1canDiced tomatoes
- 6cupsBeef Broth
- 1tbspTomato paste
- Salt & Pepper(to taste)

- 1–2tspWorcestershire or soy sauce(optional)
- Paprika or garlic powder(optional)
- Spinach/kale(optional)
- 1cupSmall pasta(optional)
- SplashLemon juice or vinegar(optional)
Instructions
- 1 Heat oil in a large pot or Dutch oven over medium-high heat.
- 2 Add beef and brown on all sides. Remove beef and set aside.
- 3 Add onion, carrots, and celery to the pot and sauté for 5 minutes until softened.
- 4 Add garlic and cook for 1 minute more until fragrant.
- 5 Stir in tomato paste and cook for 1 minute.
- 6 Pour in diced tomatoes and beef broth. Stir to combine.
- 7 Return the browned beef to the pot.
- 8 Bring to a simmer, then reduce heat, cover, and simmer for 45–60 minutes, or until beef is tender.
- 9 Add potatoes and any other remaining vegetables (green beans, corn, zucchini).
- 10 Cover and simmer for another 20–25 minutes, or until potatoes are tender.
- 11 If adding optional pasta, stir it in during the last 10 minutes of cooking.
- 12 Season generously with salt and pepper to taste.
