Main

  • 1–1.5lbsBeef(stew meat or ground)
  • 2tbspOil
  • 1Onion(diced)
  • 3clovesGarlic
  • 3Carrots(sliced)
  • 2–3stalksCelery
  • 2–3Potatoes(cubed)
  • 1cupGreen Beans
  • 1cupCorn(optional)
  • 1Zucchini(optional)
  • 1canDiced tomatoes
  • 6cupsBeef Broth
  • 1tbspTomato paste
  • Salt & Pepper(to taste)

Flavor Boosts

  • 1–2tspWorcestershire or soy sauce(optional)
  • Paprika or garlic powder(optional)
  • Spinach/kale(optional)
  • 1cupSmall pasta(optional)
  • SplashLemon juice or vinegar(optional)

Instructions

  1. 1 Heat oil in a large pot or Dutch oven over medium-high heat.
  2. 2 Add beef and brown on all sides. Remove beef and set aside.
  3. 3 Add onion, carrots, and celery to the pot and sauté for 5 minutes until softened.
  4. 4 Add garlic and cook for 1 minute more until fragrant.
  5. 5 Stir in tomato paste and cook for 1 minute.
  6. 6 Pour in diced tomatoes and beef broth. Stir to combine.
  7. 7 Return the browned beef to the pot.
  8. 8 Bring to a simmer, then reduce heat, cover, and simmer for 45–60 minutes, or until beef is tender.
  9. 9 Add potatoes and any other remaining vegetables (green beans, corn, zucchini).
  10. 10 Cover and simmer for another 20–25 minutes, or until potatoes are tender.
  11. 11 If adding optional pasta, stir it in during the last 10 minutes of cooking.
  12. 12 Season generously with salt and pepper to taste.

  • Optional flavor boosts can be added for extra depth of flavor. Spinach or kale can be added in the last few minutes of cooking for extra greens. A splash of lemon juice or vinegar at the end can brighten the flavors.
