Instructions

Chicken Marinade

  1. Mix all marinade ingredients in a bowl.
  2. Add the chicken strips and coat well.
  3. Marinate for at least 1 hour, or preferably overnight.

Red Glaze

  1. Whisk together oil, tomato paste, red pepper paste, ketchup, water, paprika, and salt until smooth and slightly runny.

Cook the Chicken

  1. Heat a large pan over medium-high heat.
  2. Add the red glaze oil and the marinated chicken.
  3. Cook until almost done, then continue cooking until the sauce reduces and the chicken is crispy and golden.

Assemble

  1. Lay out a flatbread.
  2. Spread yogurt and a little red pepper paste on the bread.
  3. Add the crispy chicken, green jalapeños, sumac onions, and french fries.
  4. Roll tightly into a shawarma.

The Crispy Finish

  1. Brush the outside of the rolled shawarma generously with the remaining red glaze.
  2. Place seam-side down in a hot pan.
  3. Toast on all sides until the flatbread is deep golden, crispy, and slightly charred.
  4. Serve hot with extra garlic yogurt and pickles.
