Ingredients

Pasta

  • 12ozElbow macaroni(Dry)

Sauce

  • 1 ½cupBirria Consommé(Strained and defatted)
  • 1cupCottage Cheese(Low-fat, blended until smooth)
  • 2cupSharp Cheddar Cheese(Freshly shredded)
  • 1cupOaxaca Cheese(Shredded)
  • 2tbspButter(Unsalted)
  • 2tbspAll-purpose flour(For roux)

  • 12ozLean Beef Birria(Cooked and shredded)

Garnish

  • 2tbspFresh cilantro(chopped, for garnish)

Instructions

Prep and Pasta

  1. 1 Preheat the broiler to high.
  2. 2 Bring a large pot of salted water to a boil and cook macaroni until al dente; drain and set aside.
  3. 3 While pasta cooks, blend the cottage cheese in a food processor until completely smooth.

The Consommé Cheese Sauce

  1. 1 In a large skillet or Dutch oven, melt the butter over medium heat and whisk in the flour, cooking for 1 minute.
  2. 2 Gradually whisk in the strained birria consommé, simmering until slightly thickened.
  3. 3 Reduce heat to low and stir in the blended cottage cheese, cheddar, and half of the Oaxaca cheese until melted and creamy.

Assembly and Broil

  1. 1 Fold the cooked pasta and shredded birria beef into the cheese sauce until well coated.
  2. 2 Transfer to a broiler-safe baking dish and top with the remaining Oaxaca cheese.
  3. 3 Broil for 3-5 minutes until the cheese is bubbling and golden brown; garnish with fresh cilantro before serving.
