Instructions

Assembly and Baking

  1. Preheat your oven to 400F.
  2. In a white oval baking dish, create a base layer with half of the pepperoni slices.
  3. Add the chicken chunks, red bell pepper strips, and red onion wedges over the pepperoni.
  4. Pour the pizza sauce over the mixture, ensuring it coats everything evenly. Sprinkle the minced garlic and dried oregano over the sauce.
  5. Top the dish with the shredded mozzarella and the torn fresh mozzarella.
  6. Arrange the remaining pepperoni slices across the very top so they form a single layer.
  7. Bake for 30 minutes, or until the chicken is cooked through, the cheese is bubbling, and the top layer of pepperoni is golden and crisp.
  8. Remove from the oven, garnish with fresh torn basil, and serve immediately.

Chef's Notes & Tips

Tip 1 of 3

To achieve the crispiest pepperoni edges, pat your chicken dry with paper towels before placing it in the dish; excess moisture prevents browning.

Tip 2 of 3

If you want an extra flavor punch, finish the dish with a drizzle of hot honey or a dusting of red pepper flakes after it comes out of the oven.

Tip 3 of 3

Leftovers store well in an airtight container for up to 3 days, but reheat in a toaster oven or air fryer to bring back the crispness of the pepperoni.
