Ingredients

  • 6ozChicken breast(thinly sliced)
  • 4ozLinguine(dry weight)
  • 2cupBroccoli(florets cut small)
  • 2tbspOlive Oil(extra virgin)
  • 3cloveGarlic(thinly sliced)
  • ¼cupParmesan cheese(freshly grated)
  • ½pieceLemon(zested and juiced)
  • to tasteBlack pepper(freshly cracked)
  • to tasteSea Salt(fine grain)

Instructions

Prep and Boil

  1. 1 Bring a large pot of salted water to a boil. Cook linguine according to package directions, but drain 1 minute early, reserving 1/2 cup of starchy pasta water.
  2. 2 While pasta cooks, season chicken with salt and pepper.

Sear and Toss

  1. 1 In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add chicken and sear until golden and cooked through. Remove and set aside.
  2. 2 In the same skillet, add remaining oil and broccoli. Sear until bright green and slightly charred, about 3-4 minutes.
  3. 3 Add garlic and cook for 30 seconds until fragrant.
  4. 4 Add the cooked pasta, chicken, lemon juice, zest, and half the reserved pasta water to the skillet. Toss vigorously over medium heat until a light, silky sauce forms, adding more water if dry.
  5. 5 Turn off heat, stir in parmesan and plenty of cracked black pepper before serving.
