Instructions

Prepare and Sear Chicken

  1. Season chicken slices generously with salt, pepper, and half of the garlic powder.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook for 4-5 minutes per side until golden brown and cooked through. Remove from pan and set aside.

Wilt Spinach and Eggs

  1. In the same skillet, add the fresh spinach and the remaining garlic powder. Sauté for 1-2 minutes until just wilted.
  2. Push the spinach to the edges of the pan to create 4 small wells in the center.
  3. Add a splash of oil to the wells, crack an egg into each, season with salt and pepper, and cover the pan.
  4. Cook for 2-3 minutes until whites are set but yolks are still runny. Serve immediately with the chicken.

Chef's Notes & Tips

Tip 1 of 2

To ensure even cooking of the chicken, slice the breasts into thin cutlets or pound them to an even thickness before searing.

Tip 2 of 2

If you have leftover spinach, you can easily store it in an airtight container with a paper towel for up to 3 days, though this recipe is best enjoyed fresh.
