Dressing
- ¼cupTahini(well-stirred)

Instructions
Prep and Roast
- 1 Preheat oven to 400°F (200°C).
- 2 Toss dry chickpeas with olive oil and paprika. Spread on a baking sheet and roast for 20 minutes until crispy.
- 3 While chickpeas roast, grill the chicken breasts until cooked through. Let rest for 5 minutes then slice.
Dressing
- 1 Whisk together tahini, lemon juice, garlic, and a pinch of salt.
- 2 Gradually add water, one tablespoon at a time, until the dressing reaches a smooth, drizzling consistency.
Assembly
- 1 In a large bowl, layer the chopped romaine and spinach base.
- 2 Arrange the tomatoes, cucumber, red onion, quinoa, crispy chickpeas, and sliced chicken in separate distinct mounds on top of the greens.
- 3 Sprinkle with crumbled feta.
- 4 Drizzle the lemon tahini dressing over the entire bowl just before serving.
